I'm looking at what I need to set up in 2007 for users of my
corporate template solutions, rather than my personal use. It's
more about how it can be easiest for me to support them than about
what effort they should put in to learning their new version of
Word. Spare time for self pace training, or more formal training
isn't on their list of priorities.

I'm not sure I have understood from this, what your issues are.
At a personal level, 2007 is much more user friendly than previous versions,
so if users are trained correctly up front, they will need vastly less
support. (By users I am NOT talking about technical writers). If you can't
train them formally, you just have to train yourself so you can train them
informally - isn't that what we have always done?
At a corporate level, I would think that the issue comes down to the macros
provided, and the degree of control the techos enforce over the users.
...and 2007 is a control freak's delight - many more security options and
much more control at the template level. I can't see that initially you
need do anything differently.

The Addins tab does most of what I need, except it needs to be
visible all the time, as I provide an alternative work
environment.

What do you mean by this? What is an "alternative work environment" and are
you sure it is even still necessary in 2007?

It also doesn't let me display the name of the style
that has been applied to the current paragraph.

You can still use Normal view - now called Draft view, so nothing has
changed. You can also place a styles command on the QAT that lets you see
the style of the current text.
