If your pdf has no Security options applied, then the ScanSoft option is 
possible:
  a.. I find that it works quite well with straight forward text.
  b.. If you have a couple of tables in the doc things get a little messy.
  c.. If you have lots of tables, ScanSoft does a very poor job.
  d.. The output keeps the appearance of the original doc but everything is in 
Normal style -- it cannot process styles.
The other option is to use Acrobat (full kit) and save as either Rich Text or 
plain text (Adobe Reader 6 lets you save as plain text I think).

I find that it is often quicker to save as plain text and re-format using your 
own styles/template.
