Acrobat has a Compare option under the Tools menu. I don't know how well it
works.

If you are more interested in changes to the text and don't care too much
about differences in formatting, you should get cleaner results by using
Save As Text and comparing the resulting text files in a diff utility (I
use and recommend Beyond Compare).
