I know that in a previous e-mail I used 'CVs' to indicate the plural of CV.
But I was using English pluralisation rules. In Latin, the plural would most
likely be CV?

Calling it "incorrect" is going a bit far, I think.
I prefer to omit the apostrophe, too, but some
British and Australian usage guides still prefer
to insert it. Only in US English is the practice
widely deprecated in style guides.
