I had to do precisely this yesterday with some stuff.

I used:
1. The text tool to change individual words (only works within a=
 line at a 
time) .
2. The object tool to select images used for company ids etc.=
 Once 
selected, they can be deleted.

3. For references embedded in images the only answer I found was
to pick white for the pencil marker, setting a wide with, and=
 crossing
out.  (You may need different colour settings for different image=
 
foreground/background combinations.)

4. Acrobat 5 as updated handled the job ok.
