Actually, not true. In terms of pure theory, most of the great composers went outside of the strict set of rules. Many of them ignored key signatures and used "outside" notes all the time. THeir brilliance is that when playing or listening to their music you can't tell which notes are "inside" and which are "out" - a testament to the way that they used these creatively in order to fit and enhance the melody, etc.

In terms of subject matter, Mozart was EXTREMELY controversial, lewd, you name it! Always breaking the traditions and shocking people.

Franz Liszt even had many groupies, and was the first "rock star" type of musical personality.
