Here's my list I found of '04' I enjoyed. 

1) Ayreon - The Human Equation
2) IQ - Dark Matter
3) Neal Morse - One
4) Pain Of Salvation - Be
5) Michael Pinnella - Enter By The Twelfth Gate
6) Happy The Man - The Muse Awakens
7) Enchant - Live At Last 
8) Dead Soul Tribe - The January Tree
9) California Guitar Trio - Whitewater 
10) Magic Pie (single) - Change

In 2005 look for Magic Pie to complete their debut album which after
hearing a few songs will be a great collection.
I'd also like to mention Kamelot's Epica I enjoy as well, but it didn't
make the list since it was a '03' release. 
I'm sure there are far more that I haven't heard I'd enjoy, until then
here's my list.
