Which ones, Frank? There are ***thousands **** of commands available to
the Linux user.

Are there really thousands of linux commands? Seems a bit high. Anyway, I
was talking about commands that have been ported to dos. Google and get a
feel. This sight of 40 seems like a reasonable start. It seems to have the
bulk of what people commonly think of when they think unix commands. I
think sed, awk, and sort would be a welcome addition to any .bat file
maker.

I highly recommend seeking out a unix command tutorial. There are tons
online.

Which shell? Which variants?

Shell as in, "*nix shell" isn't relevant, yet. Just keep using the dos
shell you've been using. The idea here being to introduce *nix slowly in
the environment you already use. If, at a later time, you want to dive
deeper, go for a *nix shell for dos.

Remember, I'm giving this advice to someone already expressing frustrating
at trying to use a linux distro.

Lots of Linux commands
aren't pertinent in DOS.

I'd bet most of those haven't been ported :)

However, there are those who port just for the port of it.
