Do you do one background around all the letters or create a separate
background for each letter?

I do it 2 different ways, depending on the size of the lettering.
For a large area (we've done some of those 3' to 6' tall stockings,  
the fur edge is almost 1' tall)
I create a background 'shape' outline of the lettering, and using the  
stitch eraser (see, I found a use for it!) I shave off the fur in  
that area to 1/4" or so, then sew down the lettering.
If it is a design (bows, bells, ornaments) just duplicate the outline  
of the design, move it to the first thing on the list, and do the  
same fill as I mention next-then go on to the design itself.
For smaller 'normal' stockings, I do the same outline just a bit  
larger than the lettering, and sew down a very open fill, 40-60  
stitch count fill-just a criss cross weave to tie down all that  
blasted 'fur'. Do this in white-and it disappears on the fur. Then do  
your regular lettering on top. You will end up with a clean tight  
lettering with a 'white' shadow area around it-the sewn down  
fur....and it looks great.
