You can bring your own if you want to. (I wouldn't put it in checked luggage.) 
There are plenty of gas stations and grocery stores you can buy it at when you 
get to Florida. You can carry just about anything onboard except knives, guns, 
and alcohol. The water from the ship is very safe to drink. USDA, FDA, US Coast 
Guard, and other US government agencies regulate the food, water, safety of all 
cruise ships that come and go from the US.
I would bring an empty 16oz. water bottle and keep refilling it.
