  The best way that I have found to build my confidence is to teach someone
  else the things I know.  If you are talking about your confidence to go out
  and about with your guide dog, then perhaps you could buddy up with a new
  guide dog owner in the area?  Guide dogs could help you with this.  When I
  trained with my latest dog, my trainer introduced me to a recently blind,
  new guide dog owner.  I became his mentor but we soon became friends and now
  meet for lunch every week.  

  Also, something that I tell my girlfriend every time she goes for a driving
  lesson is that she has done it before so she can do it again.  Use it as a
  mantra when you feel your confidence sliding.
