Yeah, I knew about the template but just couldn't quite work out (after little sleep) the importance of getting rid of any of them and letting Word create a new one. I've done it myself in the past ... but obviously not quite got the connection there!

Normal.dot is Word's default Template file. It can be modified and saved by the user. However, if you mess it up, or it becomes corrupt, it can be deleted (or even just renamed), and Word will re-create a new one next time it is run.
