Hi Chris,
 
It's a bit cludgy, but open a message.  Edit Menu, select
Edit message.  Format Menu, select HTML.
 
Otherwise incoming messages are usually displayed in the
format set, unless you specifically set Options to read all
incoming mail in plain text.
