Apple does this with a multipart MIME message- here's a snip from the source
of their latest missive:

Content-Type: multipart/alternative; charset=us-ascii;
    boundary="This_is_the_boundary_hip_ho"
Content-Transfer-Encoding: 7bit
X-UIDL: 49733


You appear to be using an email application that won't properly
display the graphical (or HTML) version of our message.
