Ann: Definitely not to be missed are the Otaga Penisular trusts on South Island where you can see the world's only onshore Royal Albatross colony (at Taiaroa Head) and the Yellow-eyed Penguin reserve. Lots of other wildlife can be seen incl. Hooker's sea lions, several different species of dolphins, and the occasional whale. On North Island you must check out the Mount Bruce Wildlife reserve - lots of endangered species incl kiwi. Don't forget that the summer months here is the austral winter so check out abundances of different areas to match the times you are planing to visit. However birding at Taiaroa is always good.
A useful and inexpensive field guide is the Handguide to the Birds of New Zealand. Barrie Heather and Hugh Robertson
