I'd personally go for:

You could have the floor mount enlarger (with color head) professionally
packed and shipped for less money than you will pay for the Aristo head and
camera conversion hardware - that you will probably have to have machined.
The Cam-larger will be a PITA to use!
If either of the above won't work, another path is to get a Beseler 4x5
enlarger ($100) and get the Beseler 8x10 conversion head. Even if a new
head, the whole package will be equal or less than converting a camera. And
a WHOLE LOT EASIER to use. There's a plethora of carriers and lens boards
available for a standard enlarger.
