I would suggest either the IRiver 320 or 340 model. It is accessible with
rockbox, and even without that, it's fairly easy to use in my opinion. It also
has built-in FM radio, from which you can easily record broadcasts. You can
also make voice or other recordings, either with the built-in microphone or
with an external one or from other devices. I know, you would prefer memory
cards instead of hard disk, but this is not possible. Also, I don't know if it
supports the Audible format, you talked about, since I've never tried any books
from there. Actually, I don't think, any of the iRiver models support external
memory cards. ITunes is not needed to use it. You just have to install the
driver that comes with the unit, so Windows will recognize it as a drive.

I am planning to replace my Creative Muvo MP3 player with something more

From what i have read on this forum it looks like the Apple IPODs mandate
Itunes which is not very accessible, especially as I use Windoweyes rather than
JAWS. I much prefer the Windows Explorer method of downloading files onto the
IPOD.
The Iriver products look good, but there are a lot of models and I am unsure
which ones are adequately accessible, support audible format 3, and are easily
obtainable in the UK.
The Rockbox WEB site lists several other products as supported, but I have no
knowledge of these.
