Hi Harry,
If you install Rockbox on your iPod, you can use Windows Explorer to
copy music from your PC to your iPod. However, Rockbox will not rip
CDs to your computer. You will need some other program to do this;
iTunes is an option, as is the free CDEx or Windows Media Player.
Many people have had good luck with CDEx.

As for uninstalling iTunes, since you just installed it, if you
really don't want it, the easiest thing is probably to do a system
restore to a time prior to installing it. Then you'll know for sure
you uninstalled all of it.
